Choose the actual ingredient and its preparation. Raw and cooked rice, granulated and powdered sugar, and solid and melted fats are separate selections.
If your recipe supplies both a volume and a gram weight, use its own gram weight to reproduce that recipe. Choose the ingredient and measure here when you need to calculate another quantity.
English-language recipes come from many countries. A US customary cup, a 240 mL recipe cup and a 250 mL metric cup are different choices. An Australian measuring tablespoon is 20 mL; other recipe conventions use different tablespoon sizes.
Select the capacity printed beside the measure. An ordinary mug or dining spoon does not become a standardized measuring tool because its name appears in a recipe.
